Oatmeal Waffles

A hearty waffle that makes a great brunch or lunch. Serve with natural peanut butter and syrup, or just eat with a sprinkling of powdered sugar. Using Mickey shaped waffle maker, makes it taste just that much better!
Ingredients:
2/3 cup coconut flour
1/3 cup whole wheat flour
2/3 cup rolled oats
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/8 teaspoon salt
1 tablespoon brown sugar
1 egg
1 egg white
2 tablespoons butter
1/2 teaspoon vanilla
2/3 cup skim milk
1/3 cup eggnog
Directions:
1. Melt butter, set aside so it cools a little.
2. In large mixing bowl, mix dry ingredients.
3. Set aside.
4. In small mixing bowl whisk eggs, milk, nog, and vanilla.
5. Mix in melted butter quickly.
6. Add to dry mixture.
7. Add a little more skim milk if batter is too thick.
8. Using directions on waffle maker, make waffles!
