Oatmeal Pancakes

We love all kinds of pancakes, so you are going to find lots here.
Ingredients:
4 cups rolled oats (not quick cooking oats)
1 cup flour
1/4 cup sugar
2 teaspoons baking powder
2 teaspoons baking soda
pinch of salt
1 quart buttermilk
4 eggs, beaten
1/2 cup butter, melted
2 teaspoons vanilla
-optional raisins and brown sugar, i add these when i make them right after school so they can hold them in thier hands and eat them
Directions:
1. In a large bowl, combine the oats, flour, sugar, baking powder, baking soda and salt. In a smaller bowl, combine buttermilk, eggs, melted butter and vanilla.
2. After combining, add liquid ingredients all at once to dry ingredients.
3. Stir with a fork to blend well.
4. Do not over-beat. Let stand 30 to 40 minutes.
5. Batter will thicken (if batter is too thick, add more milk, one tablespoon at a time until batter thins).
6. Cook on prepared hot griddle.
