I baked these yesterday in honor of World Nutella Day (Feb. 5th). This is inspired by a recipe I found on the Tasty Kitchen site by user JuliaAndrusWilliams. The muffin is fluffy and balances perfectly with the sweet, creamy, chocolaty frosting.
Ingredients:
muffins
1/2 cup old fashioned oats
1/2 cup buttermilk
1/4 cup brown sugar
3 tbsp butter, melted and cooled
1 egg
1 tsp vanilla extract
1/4 cup whole wheat flour
1/4 cup ap flour
pinch salt
1/2 tsp baking powder
1/4 tsp baking soda
frosting
2 tbsp butter, softened
2 tbsp confectioners sugar, sifted
1/4 cup nutella
trader joe's elegant cocoa pearls (or similar) for decoration
Directions:
1. Muffins
2. Soak oats in buttermilk until softened, about 30 minutes.
3. Preheat oven to 375F. Line muffin tin with cupcake liners, or prepare with cooking spray.
4. In a mixing bowl, cream together brown sugar and melted butter. Add egg and vanilla, whisk.
5. In another bowl, combine flours, baking powder, soda, and salt.
6. Add flour mixture to wet ingredients, about half at a time. Mix until smooth. Add softened oats and stir until just incorporated.
7. Divide into muffin tin. Bake for 12-15 minutes, until a toothpick inserted comes out clean (mine took 14 minutes).
8. Transfer to cooling rack and allow to cool completely.
9. Frosting
10. Beat together butter, sugar and Nutella until smooth.
11. Frost cooled muffins. Top with Cocoa Pearls.
