Oatmeal cookies, also go by names such as energy bars, Quaker oat cookies, or as we called them porridge biscuits are a great favorite of mine. This recipe is easy to make and very tasty. I got it when I was about 12yrs old from my best friend (rip) who got them from the Mom of another good friend, she was from South Africa so maybe that is the source.
Ingredients:
1 1/2 cups porridge oats
1 cup sugar
350 g self rising flour
1 1/2 cups plain coconut flakes (non sweetened or toasted)
200 g margarine
3 tablespoons honey
3/4 teaspoon baking soda
Directions:
1. Mix first 4 ingredients well in a large bowl.
2. Heat last 3 ingredients in a large pan over a low heat till come to a boil; remove from heat.
3. Combine the dry ingredients with the hot mixture in pan.
4. Press into a flat large baking tray lined with baking paper (about 35cmx35cm).
5. Bake for about 10-15 minutes at medium heat until lightly golden.
6. Remove and cut into squares (about 5x5cms).
7. Pop back for a further 5-10 minutes.
8. Remove and separate onto cooling rack.
