I got this recipe from a coworker after she brought some of this cake at work for us to enjoy. We all enjoyed this cake.
Ingredients:
1 cup rolled oats
1 1/2 cups boiling water
1 cup white sugar
1 3/4 cups brown sugar, separated
2 eggs
3/4 cup vegetable oil
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 cup white chocolate chips
1/2 cup butterscotch chips
Directions:
1. Mix rolled oats and water; let stand.
2. Mix 1 cup brown sugar, white sugar, eggs, oil and vanilla in another bowl.
3. Add oat mixture.
4. Mix together flour, baking soda, baking powder and salt.
5. Mix all ingredients together and pour into a greased 9x13” pan.
6. Sprinkle remaining brown sugar, white chocolate chips and butterscotch chips on top of cake.
7. Bake at 350 degrees Fahrenheit for 30 to 45 minutes, until toothpick inserted in cake comes out clean.
8. Cool and enjoy.
