This cake is to die for, Its a recipe that has been passed down for many generations, hope you enjoy!!
Ingredients:
1 1/2 cups boiling water
1 cup quick-cooking oats
1 cup brown sugar
1/2 cup shortening
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup butter
1/2 cup brown sugar
1 teaspoon vanilla
1/4 cup evaporated milk
1 cup chopped pecans or 1 cup walnuts
1 cup shredded coconut
Directions:
1. Stir oats in the boiling water, let stand for 20 minutes. Cream shortening, sugars, eggs. Sift flour together with salt, cinnamon Add to creamed mixture. Add oatmeal, mix well.
2. Bake in a well greased pan in 350°F oven for 25-30 minutes.
3. While cake is baking melt together in a sauce pan the icing ingredients.
4. While cake is still warm, spread icing over the top of the cake and put under broiler till bubbly and brown about 5 - 10 minutes.
