Oatmeal Apricot Walnut Cookies

These oatmeal cookies are fruity good! From the Texas Church Supper and Family Reunion Cookbook .
Ingredients:
3/4 cup shortening
1 cup brown sugar
1/2 cup granulated sugar
1 egg
1/4 cup milk
1 teaspoon vanilla
1 cup flour
1 teaspoon salt
1/2 teaspoon baking soda
3 small bananas, mashed
1/2 cup dried apricot, chopped
1/2 cup chopped walnuts
3 cups oats
Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl, mix shortening, brown sugar, granulated sugar, egg, milk, and vanilla until smooth. Add the flour, salt, and baking soda and mix well.
3. Stir in the mashed banana, apricots, and walnuts. Stir in oats,.
4. Drop by heaping tablespoons onto a cookie sheet. For a softer chewy cookie, bake for 12 minutes; for a crunchy cookies bake for 14-15 minutes.
5. Cool on the cookie sheet for a minute before placing on a wire rack to cool.
