Delicious healthy muffin for a quick breakfast on the run!
Ingredients:
1 1/2 cups oatmeal
1 1/4 cups flour
3/4 tsp cinnamon
3/4 tsp nutmeg
1/8 tsp allspice
1 tsp baking powder
3/4 tsp baking soda
1 cup unsweetened applesauce
1/2 cup soy milk
1/2 cup brown sugar
2 tbsp oil
1 egg white
1/4 cup oatmeal
1 tbsp brown sugar
1/8 tsp cinnamon
1 tbsp margarine (melted)
Directions:
1. In large bowl, combine oatmeal, flour, cinnamon, nutmeg, allspice, baking powder and baking soda. Add applesauce, soy milk, brown sugar, oil and egg white; mix until dry ingredients are just moistened. Fill muffin cups almost full. In small bowl, combine topping ingredients; sprinkle evenly over batter. Bake in 400 oven for 20 minutes or until deep golden brown.
