High fiber, low calorie, healthy bran muffin
Ingredients:
2 cups bran
1/8 cup packed brown sugar
2 teaspoons baking powder
2 egg whites
1/4 cup honey
1 cup soy milk
2 tablespoons vegetable oil
Directions:
1. Combine dry ingredients
2. Add milk, egg whites, honey and oil
3. Mix just until moistened
4. Fill cups almost full
5. Bake at 425 degrees F for 10-15 minutes or until brown
6. *Try substitute bananas for oil
7. *Also can add raisins or nuts
