These are made with fruit juice concentrate instead of other sweeteners. They are not going to turn out like a commerical bar, but that is not what I am trying to make. I am really after a healthy snack to throw in my purse, something that travels well and is not too sweet. I am still tweaking this, so comments are appreciated.
Ingredients:
1/2 cup no-sugar-added peanut butter
1/2 cup apple juice concentrate
2 tablespoons oil
1 teaspoon cinnamon
2 cups oatmeal
2 cups puffed wheat cereal
2/3 cup almonds, finely chopped
2/3 cup walnuts, finely chopped
1 cup golden raisin, finely chopped
Directions:
1. Preheat oven to 325 degrees.
2. Toast the oats and almonds in the oven for 10 minutes, stirring frequently.
3. In a pot combine the oil, juice concentrate, and peanut butter. Cook over medium heat, stirring costantly until peanut butter is melted. Add cinnamon, toasted oats and almonds, cereal, and raisins. Stir well until mixture is totally combined.
4. Spread the mixture evenly in a cookie sheet lined with parchment paper. Press down firmly. The thinner the layer, the crunchier the bars will be.
5. Bake for 30 minutes. before the bars cool, slice into desired size bars.
