These muffins are easy to make and can be mixed in just two bowls, making cleanup speedy. This is a pleasant-tasting date muffin with a nice texture, compatible with many meals. —Deborah Ader, Sullivan, Indiana
Ingredients:
3/4 cup king arthur unbleached all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1 egg
1/3 cup milk
1/4 cup butter, melted
1/4 cup chopped dates
1/4 cup chopped pecans
Directions:
1. In a bowl, combine the flour, sugar, baking powder, cinnamon, salt and nutmeg. In another bowl, whisk the egg, milk and butter; stir into dry ingredients just until moistened. Fold in the dates and pecans.
2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack. Yield: 6 muffins.
