Homemade breakfast bars are high in fiber and taste.
Ingredients:
1/2 cup butter
1/2 cup brown sugar
1/2 cup maple syrup
4 eggs, small
2 cups whole-wheat flour, unsifted
1 cup wheat germ
1 cup flaxseed, ground
2 teaspoons baking powder
1/2 teaspoon salt
1 cup oats, uncooked
1 cup walnuts, chopped
1 cup raisins
Directions:
1. Preheat oven to 350 degrees.
2. In bowl, cream butter until light.
3. Beat in sugar and syrup.
4. Beat in eggs, one at a time.
5. Blend in flour, wheat germ, flaxseed, baking powder, and salt; mix well.
6. Stir in oats, raisins, and nuts.
7. Spread evenly in lightly greased 9 x 13 x 2-inch baking pan and bake for 30 minutes.
8. Cool in pan.
9. Cut into 1 X 4 1/3-in bars.
10. Store in tin or wrap well in foil. Store in refrigerator or freeze to be used as desired.
