If there is no time to sit and eat,you can take it with you. Good for picnics and backpacking.
Ingredients:
1 cup sifted all-purpose flour
1 cup whole wheat flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 teaspoon baking powder
2/3 cup nonfat dry milk powder
1/3 cup wheat germ
1/2 cup firmly packed brown sugar
1/4 cup chopped walnuts
1/2 cup unsalted dry roasted peanuts,chopped
1/2 cup raisins
3 eggs
1/2 cup vegetable oil
1/2 cup molasses
3/4 cup orange juice
2 medium-size bananas,mashed
1/3 cup chopped dried apricots
Directions:
1. Combine flours,salt,soda,baking powder,dry milk,wheat germ,sugar,nuts and raisins in a large bowl
2. Blend throughly with pastry blender.
3. Beat eggs with mixer until foamy,add oil,molasses,orange juice,and bananas beating after each addition.Add apricots,mix just to chop coarsely.
4. Pour mixture into bowl with the dry ingredients.
5. Stir just until all flour is moistened
6. Pour into (2)- 7 3/8x3 5/8x2 1/4-Inch greased loaf pans
7. Bake in a slow oven at 325 degree for 1 hour,until center is firm when pressed lightly with fingertip.
8. Cool slightly in pan on rack,then remove from pan and cool completely
9. When Cool,Wrap tightly and store over night to blend flavors,before eating.
10. Note:May make muffins at 350 degree for 20 minutes baking
