Ummmm good! These are delicious and easy to make. Lucy serves these on her brunch table but they're great anytime of day.
Ingredients:
1 cup whole wheat flour
1 cup flour
1 tablespoon baking powder
1 pinch salt
1/4 cup brown sugar
1 teaspoon cinnamon
1 cup fine grated carrot
1 egg
1/4 cup canola oil
1/4 cup molasses
1 cup milk
1/2 cup raisins
1/2 cup walnuts (chopped)
Directions:
1. Mix the two flours, baking powder and salt.
2. Incorporate brown sugar, cinnamon and carrots.
3. Beat egg, oil, melasse and milk and add to dry ingredients and mix well.
4. Add raisins and walnuts.
5. Spray muffin tin with non-stick cooking spray and fill each muffin mold 2/3 full.
6. Bake in 350 degree oven for 20- 25 minutes.
7. Cool and store in cool place or freeze.
