Nothing To It Spinach And Mushroom Quesadillas-ci

Just another not a recipe recipe to remind everyone how easy it is to make a quick, healthy lunch. You could easily add cooked ham or chicken to this, as well.
Ingredients:
4 large flour tortillas
1/2lb fresh spinach, baby or torn
4oz fresh mushrooms, sliced
about 1 cup shredded mexican blend or pepper jack cheese
salsa, sour cream(optional)
Directions:
1. Preheat broiler
2. place 2 tortillas on broiler safe pan and sprinkle, to the edges, with cheese
3. add spinach and mushrooms and top with remaining tortillas
4. heat in broiler until crisp and veggies cook down, slightly
5. Remove and slice into wedges
6. Serve with salsa and sour cream, if desired
7. *You can also do this in a cast iron skillet on the stove top if you are confident in your flipping ability, just prep as above, if not, then cut tortillas in half prior to adding ingredients, and proceed in dry cast iron skillet, turning once bottom tortilla has begun to brown.
