Nothing To It-cast Iron Corn Bread

A simple, traditional corn bread. This isn't sweet, nor does it have anything added, but you CAN use it for a base recipe to add jalapenos, onion, cheese, etc. We like it best with butter and honey!
Ingredients:
2 cups cornmeal
3/4 cup ap flour
1t baking soda
1t salt
2 eggs, slightly beaten
1 1/4-1 1/2 cups buttermilk
3-4t bacon fat or shortening(can use 1/2 butter)
Directions:
1. Place fat in 8-10inch cast iron skillet and leave in oven while preheating to 450.
2. Combine cornmeal, flour, baking powder and salt
3. Add eggs and fold in to combine
4. Add 1T of now melted fat(carefully!) and buttermilk, not quite all at once, and mix just until moistened, to form a pourable batter.
5. Let rest 10 minutes
6. Pour into skillet and bake 20-25 minutes until edges pull away from sides and top is a golden brown.
7. Serve warm with butter and honey!
