Not Your Momma's Chicken Soup

This Thai inspired chicken soup is definitely not your Momma's chicken soup. Coconut milk gives it a nice rich flavor and the spinach and chickpeas are a nice surprise in this elegant soup.
Ingredients:
cooking spray
1 lb boneless skinless chicken breast, diced
1 large onion, thinly sliced
1 red bell pepper, diced
2 garlic cloves
3 cups chicken broth
1/4 cup soy sauce
9 ounces frozen spinach
15 ounces chickpeas, drained & rinsed
13 ounces light coconut milk
1 teaspoon dried ginger
1/4 cup cilantro, chopped
Directions:
1. Coat the inside of a Dutch oven with spray oil.
2. Heat over medium high heat and cook chicken until light browned, about 8-10 minutes.
3. Remove chicken from pan and set aside.
4. Add onions, bell peppers, and garlic to pan and saute for just a few minutes until the ingredients are tender crisp.
5. Return the chicken to the pan and add the chicken broth and soy sauce.
6. Bring to a boil, reduce heat and simmer covered for about 15 minutes.
7. Add spinach, chickpeas, coconut milk and ginger.
8. Simmer for an additional 10 minutes or until heated through.
9. Add cilantro and serve.
