This is a a low fat, low carb brownie recipe that comed from Diabetic Gourmet. Exchanges:1/2 bread/starch, 1/2 fat.
Ingredients:
3/4 cup all-purpose flour
3/4 cup sugar
1/4 cup unsweetend cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup oil
2 teaspoons chocolate flavoring or 2 teaspoons chocolate flavoring
2 eggs
3/4 cup powdered sugar
1 tablespoon unsweetened cocoa
1 tablespoon skim milk or 1 tablespoon 2% low-fat milk
1/2 teaspoon chocolate flavoring or 1/2 teaspoon chocolate flavoring
1/8 teaspoon butter flavor extract
Directions:
1. Preaheat oven to 350 degrees.
2. Grease bottom only of 8-inch square pan.
3. Combine all of brownie ingredients in a mixing bowl and mix well.
4. Spread in greased pan.
5. Bake 13 to 18 minutes, or until top is dry and springs back when touched lightly in center.
6. Cool for 15 minutes.
7. Meanwhile, combine all frosting ingredients in a small bowl and mix well.
8. Spread over top of slightly cooled brownies.
9. Cool completely before cutting.
