Tastes like potatoes fried on the stove to the 'tender' stage, not cripsy. Very good, easier, healthier, and quicker. We never fry potatoes anymore, family requests this version all the time. Ingredients:
6-8 medium size potatoes, scrubbed, skin on, large -but thin -diced (thick pieces take longer to cook). |
1 small white onion, diced |
2 t chopped garlic |
1 red or greem pepper, diced (optional) |
2 pads butter or margarine |
seasoned salt |
garlic pepper |
parmesan cheese - sprinkle |

Directions:
1. Scrub and dice potatoes into bowl of cold water, skin on 2. Drain, and transfer to microwavable dish, with lid (preferrably vented lid) 3. Add onion, peppers, garlic, seasoned salt and pepper 4. Stir together 5. Top with butter pads 6. Lightly drizzle EVOO across top 7. Lightly sprinkle parmesan cheese over top 8. Cover with lid and pop open vent, OR partially cover with lid 9. Microwave approximately 12 minutes. Rotating halfway through if no turntable 10. Check for doneness, cook longer if needed 11. Careful - steam beneath lid will burn you - learned that the hard way! 12. Do not know the wattage, but, I have a high powered microwave. May take 15-16 miknutes for lower wattage. |
