Not Only Breakfast Casserole

An easy early prep dish put it in the oven and enjoy your family time.
Ingredients:
8 eggs
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese (for a spicier dish if you don't want it spicy do 2 cups cheddar instead)
1 cup milk
salt and pepper to taste
1 pound cooked and drained ground sage sausage
2 cups croutons (stale bread may be used)
Directions:
1. Preheat oven to 425
2. Grease an 8 x 8 or a 10 x 10 baking dish
3. Cover the bottom of the dish with croutons
4. Cook sausage and drain
5. Layer the cooked sausage over the croutons
6. In a medium bowl beat eggs, milk, salt and pepper
7. Keep one cup of cheese to the side and use to top the casserole
8. Add cheese to the egg mixture then pour over sausage
9. Cover the casserole with remaining cheese
10. Cover with foil and bake for 35 minutes
