Not My Sisters Poppy Seed Casserole

My sister introduced me to the basic Poppy Seed Chicken casserole and we enjoyed it but I just felt like it needed something more so this is my solution. Also use Lemon Garlic Marinade for Chicken for marinade. I feel like the jasmine rice is a nice combination. Uses 2 sleeves of crackers.
Ingredients:
1 lb chicken tenders
2 (10 1/2 ounce) cans cream of chicken soup
12 -16 ounces sour cream
1 tablespoon lemon pepper
1 tablespoon poppy seed
1 teaspoon sea salt
1/2 cup butter
60 ritz crackers
4 cups cooked jasmine rice
Directions:
1. Marinade the chicken in Lemon Garlic Marinade for Chicken. I let it sit for a couple of hours and bake at 350 degrees for about 30 minutes. Let the chicken cool then shread. Mix the rest of the ingredents down to salt. (The lemon pepper to taste.) I just like it to be in the background and not to overpowering.
2. Meanwhile melt the butter and add to the crushed crackers. Place 1/2 the cracker mixture in the bottom of a 9 x 12 casserole dish. Spread the chicken mixture on top then top with the rest of the crackers.
3. Bake at 350 degrees for 30 minutes or until heated through and crackers are crunchy.
4. Serve over the rice.
