My family loves this recipe for Norwegian skinny pancakes!
Ingredients:
3 eggs
1 tbsp sugar
1/2 stick margarine or butter
1 1/2 cup flour
2 cups milk
Directions:
1. Melt butter in frying pan to be used (cast iron is best)
2. Beat eggs and sugar
3. Add milk and flour alternately, ending with milk, then add melted butter
4. In hot pan, put enough batter to barely cover bottom
5. Fry until golden and turn with spatula
6. Serve warm, rolled up with sugar, jam or syrup
