Norwegian Pancakes Or Crepes

This is a Norwegian recipe for pancakes but they are more like a crepe. I have friends from Finland, Poland, Germany and France and they argue that this recipe is from their country. What can I say ;-)
Ingredients:
2 tbsp. sugar
3/4 tsp. salt
3 eggs lightly beaten
3/4 cup milk
3/4 cup sour cream
1-1/2 cups flour divided
note: the recipe does not call for vanilla but i like to add a splash.
Directions:
1. Add sugar and salt to a medium bowl. Whisk in beaten eggs. Add milk and sour cream and stir until well combined. Add flour, beginning with 1 cup, then in small amounts until consistency is of a thin pancake batter.
2. Preheat a large nonstick skillet over medium heat. Spray with vegetable cooking spray. Pour a 5 to 6 inch circle of batter into center of skillet. Rotate quickly until batter completely covers pan. When the bottom is light brown, flip and cook on second side for 30 to 60 seconds then remove from pan.
3. Repeat process until batter is gone. Serve with butter and cinnamon sugar, if desired. Roll up and enjoy!
4. Note: I like to spray the frying pan with Pam but I also add butter. Be careful that the butter doesn't scorch.
