This cookie recipe from Norway is almost identical to the cookie recipe from Poland. This is a great example of how countries around the world have similar or same recipes! This is a crisp cookie.
Ingredients:
6 egg yolks
1/2 teaspoon salt
1/3 cup light cream
1 tablespoon melted butter
1/3 cup granulated sugar
2-1/4 cups flour
1/2 teaspoon ground nutmeg or cardamom
1 tablespoon grated lemon rind
icing sugar
Directions:
1. Beat together egg yolks and salt until thick and light.
2. Beat in light cream, sugar and butter.
3. Sift together flour and nutmeg.
4. Add to egg yolk mixture with lemon rind.
5. Mix well, then chill 1 hour.
6. Roll out 1/4 of the dough at a time, keeping the remaining dough chilled.
7. Roll 1/16 inch thick.
8. Cut in 1-1/2-inch wide strips.
9. Cut diagonally at 4-inch intervals.
10. Make 1 inch slit lengthwise in center of each piece.
11. Slip one end through the slit.
12. Fry a few at a time in deep fat (350 degrees F) for 1 to 2 minutes or until golden.
13. Remove cookie from fat with a slotted spoon.
14. Drain on paper towels.
15. Sprinkle with icing sugar.
16. Store in an airtight container.
