A wonderful tomato aspic with a little twist from the Great Northwest - salad shrimp! Slice and serve on top of lettuce on a pretty plate and I'm sure you, too, will have rave reviews!
Ingredients:
1 can (10 oz.) tomato soup
1/4 teas. cajun seasoning
1 package (3 oz.) lemon jello
1 package (4 oz.) cream cheese, softened (important)
1/2 cup salad dressing (miracle whip)
2 tablespoons vinegar
1 cup finely chopped celery
1/2 cup finely chopped green pepper
1/2 cup finely chopped green onion
1/4 lb. small salad shrimp, drained and dry on paper towel
Directions:
1. Heat tomato soup (undiluted) in a small saucepan. Add theCajun seasoning and lemon jello and stir to dissolve. Remove from heat.
2. Put tomato soup mixture into food processor bowl with cream cheese, salad dressing, and vinegar. Process until smooth.
3. Add vegetables and shrimp to the soup mixture and stir (by hand) to mix in. Pour into a serving bowl or mold and refrigerate approximately 4 hours until firm.
