This old fashioned pea salad has my twist on things! I know lots of people who do not like peas who absolutely love this salad. Give it a try!
Ingredients:
2 lbs. petite frozen peas, rinsed under hot water to defrost
1/3 cup chopped sweet pickle
1/2 cup chopped red pepper
1 cup chopped celery
4 hard boiled eggs, chopped
1/4 lb. bacon, fried crisp and crumbled
1/4 cup finely chopped red or white sweet onion
1 cup cubed american or cheddar cheese
1 cup mayonnaise
1/2 cup sour cream
2 tbsp. sugar
1 tbsp. apple cider or white vinegar
salt and pepper to taste
Directions:
1. In a large salad bowl, combine the first 8 ingredients.
2. In a smaller bowl combine mayonnaise, sour cream, sugar, vinegar, salt and pepper. Whisk well to combine.
3. Pour over salad ingredients and toss gently. Refrigerate 1 hour before serving.
