Northern Thai Curry Noodle Soup

Curry soup to be served over rice noodles. Add tofu or shimp plus other vegetables as desired.
Ingredients:
1 tablespoon vegetable oil
1 small onion
2 tablespoons garlic
4 cups vegetable broth
14 oz coconut milk
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon sugar
2 tablespoons curry powder
2 tablespoons lime juice
1/2 teaspoon salt
1/4 cup coriander leaves
Directions:
1. Cook noodles and drain. Chop garlic and onion. Saute in oil in soup pot for 3 minutes. Stir in broth and coconut milk, turn the heat down low. Cover and simmer for 10 minutes. Add seasonings. Pour over noodles and top with cilantro.
