Northern Italian Pasta Shell Stuffing

These shells are stuffed with a beefy, cheesy,creamy filling. You'll be delighted with this variation. Add a salad and presto, That's Italian!
Ingredients:
3 pkgs. frozen, chopped spinach
3 lbs. italian sausage (or you can use ground round).
2 8 oz. pkgs. cream cheese, softened
2 large onions
fresh grated parmesan (it makes a world of difference).
salt & pepper
2 jumbo eggs
1 (1 lb.) pkg jumbo pasta shells
2 cups tomato sauce (your own or ready made).
Directions:
1. Strain frozen spinach until thawed under hot water and remove all of the water out and place in a large bowl.
2. Saute the sausage until browned.
3. Drain meat, reserving 2 tablespoons of fat in the pan.
4. Mix the meat, spinach and cream cheese until well blended.
5. Saute the chopped onions in the reserved meat fat until transparent.
6. Transfer onions to the bowl with the other ingredients and stir.
7. Add fresh grated cheese, salt & pepper.
8. Let mixture cool and then add the eggs.
9. The filling can be made up to 1 day in advance and refrigerated until ready to use.
10. Preheat oven to 350 degrees.
11. Boil Pasta shells in salted water until al dente.
12. Drain and cool and stuff the shells with mixture.
13. Place shells in large pan and cover with tomato sauce.
14. Cover with foil and bake for approximately 1 hour.
