Quick tasty main meal, lunch or side.
Ingredients:
2 cups fresh tomatoes, seeded & coarsely chopped
1/3 cup red onion, thinly sliced & chopped
1 (4 1/2 ounce) can green chilies, chopped
1/2 cup canned corn, drained
1/3 cup cilantro, chopped
1/4 cup olive oil
2 tablespoons fresh lime juice (or fresh lemon juice)
1/4 teaspoon kosher salt
1 lb bow tie pasta, cooked & drained
Directions:
1. In a large serving bowl, combine tomatoes through salt.
2. Add freshly cooked, drained hot pasta to sauce bowl, stirring to coat.
3. Serve.
