North African Spiced Carrots

Spicy carrot side dish or main vegetarian dish
Ingredients:
1 tablespoon olive oil
4 minced garlic cloves
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
3 cups sliced carrots
1 cup water
3 tablespoons lemon juice
Directions:
1. Heat oil in a large nontick skillet over medium heat
2. Add garlic, paprika, cumin and coriander
3. cook, stirring untilfragrant but not browned, about 20 seconds
4. Add Carrots, water, lemon juice and bring to a simmer.
5. Reduce heat to low, cover and cooik until almost tender, 6-7 minutes, until the carrots are just tender and the liquid is syrupy, 2-4 minutes.
