NORTH AFRICAN BREAKFAST COUSCOUS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hansen Estate in Crandall, Texas in 1988.
Ingredients:
2-1/4 cups water
1/4 cup sugar
2 tablespoons fresh orange juice
1 tablespoon butter
10 ounces quick cooking couscous
1/4 cup currants or golden raisins
2 tablespoons grated orange rind
1 teaspoon ground cinnamon
1/8 teaspoon salt
2 navel oranges sectioned and chopped
10 pitted dates chopped
orange sections for garnish
Directions:
1. Bring water and sugar to a boil in saucepan stirring constantly.
2. Boil gently 10 minutes or until slightly thickened then stir in orange juice.
3. Remove from heat and stir in butter.
4. Combine couscous and next 4 ingredients in large bowl then stir in hot sugar syrup.
5. Let stand 20 minutes stirring occasionally then stir in chopped orange and dates.
6. Serve warm or cold garnished with orange sections.
