Noodles and Pot Cheese

Yeah, why didn't I? **I have not found pot cheese in regular supermarkets, just specialty stores. If you cannot get it, use a cottage cheese that is as dry as possible.
Ingredients:
1/2 lb egg noodles
1 1/2 cups pot cheese
2 tablespoons butter
1/2 teaspoon salt (optional)
Directions:
1. Boil noodles until just tender.
2. Drain, do not rinse.
3. Return to cooking, off the heat, and add butter.
4. Add pot cheese and salt. Mix gently but completely. You can also return noodles to pot and brown them before mix with cheese. If you do this, increase butter by one more tablespoon.
