Noodle Soup for Needy People

In ' Nigella Express' by Nigella Lawson
Ingredients:
6 ounces udon noodles (dried, from a package)
3 cups chicken broth or 3 cups vegetable broth or 3 cups dashi
2 tablespoons soy sauce
1 teaspoon soft dark brown sugar
1 star anise
1 teaspoon minced fresh ginger
3/4 cup bean sprouts
3/4 cup sugar snap pea
3/4 cup sliced shiitake mushroom
1/2 cup finely sliced baby bok choy
2 tablespoons chopped fresh cilantro
Directions:
1. Cook the noodles according to package directions and while their water is boiling, fill a saucepan with broth, soy sauce, sugar, star anise, and ginger (when the noodles are done, drain them and put half in each bowl).
2. When the flavored broth comes to a boil, add the vegetables; they should be cooked before 2 minutes are up.
3. Pour half into each bowl, over the cooked and drained noodles, and sprinkle with cilantro.
