Noodle-and-Cheese Pudding

Ingredients:
1 cup 1% low-fat cottage cheese
1 cup vanilla low-fat yogurt
1/2 cup packed brown sugar
1/2 cup tub-style light cream cheese
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon pepper
1/2 teaspoon vanilla extract
2 large eggs, lightly beaten
2 large egg whites, lightly beaten
4 cups cooked medium egg noodles (8 ounces uncooked)
cooking spray
Directions:
1. Preheat oven to 375°.
2. Combine the first 10 ingredients in a large bowl. Add noodles, and toss gently to coat. Spoon noodle mixture into a 13 x 9-inch baking dish coated with cooking spray. Cover and bake at 375° for 1 hour. Serve warm or at room temperature.
