Nonno's Wild Rice Stuffing

Ingredients:
1/4 cup(s) butter
3 cup(s) celery
3 can(s) chicken broth
1/2 cup(s) garlic
1 package(s) giblets
1 pound(s) mild italian sausage
1 cup(s) mushrooms
1 cup(s) onions
1/3 cup(s) parsley
salt and pepper
1 package(s) wild rice (washed)
Directions:
1. Boil giblets and keep stock. Saute onion and celery in 2 tbsp butter. Remove from pan. Add remaining butter to pan and saute mushrooms; remove. Brown and crumble sausage. Add all ingredients to stock pot. Steam mixture until wild rice pops open, adding stock and/or chicken broth gradually. You want only enough liquid to steam rice, so add slowing.
