No Tomato Veggie Sauce

I can not eat tomatoes due to the acidity. This sauce is a great substitute for spaghetti/tomato sauce. I make a large batch in the crock pot and have it in the freezer.
Ingredients:
6 carrots
1 beet
1 onion
3 celery ribs
bay leaf
1 1/2 cups water
Directions:
1. Cut everything up and place in the crock pot.
2. Cook overnight until soft and mash to desired consistency.
3. It can be cooked in a pot on the stove but I prefer the consistency from the crock pot.
