No Sugar Added Banana Bread

This lower calorie, low-fat banana bread is an excellent choice if you have diabetes!
Ingredients:
3/4 cup splenda granular
1 cup applesauce
4 egg whites or 1 cup fat free egg substitute
1/4 cup plain fat-free yogurt
2 bananas, very ripe and mashed
2 teaspoons fresh lemon juice
2 tablespoons grated lemon zest
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
Directions:
1. Preheat oven to 350.
2. Spray 5x9 loaf-pan with nonstick spray and coat bottom with parchment paper.
3. Mix splenda, applesauce, egg-whites, and yogurt until completely blended.
4. Add mashed banana, lemon juice, and lemon zest.
5. Combine flour, baking soda, and salt in separate bowl.
6. Slowly add dry ingredients to wet, and stir just until blended.
7. Pour batter into prepared pan and smooth the top.
8. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out mostly clean. (Being a little on the under-cooked side, is better than overcooking.).
9. Cool for 5 minutes in the loaf pan, then remove to a rack to cool completely.
