No-Mayo Tofu Eggless Salad

Ingredients:
14 ounces pakacge firm light tofu, drained well
1/2 cup plain nonfat yogurt
1 stalk celery, finely chopped
1 scallion, chopped
1 teaspoon pickle relish or 1 teaspoon finely chopped dill pickles
1 teaspoon dijon mustard
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
Directions:
1. In large mixing bowl, mush tofu or press thru potato masher. Add yogurt, celery, scallion, relish, mustard, salt and pepper. Stir to combine. Cover and chill at least 2 hours.
