I thought I lost this beloved recipe with no way of ever retrieving it. Decided to post here for safe keeping. This recipe is the answer to not enough salt, don't like the density, and too much work dinner rolls recipe. It can be stored in the fridge until you are ready to bake them (just let warm to room temp)and will last several days. This is Bonnie Moore's recipe she is a much loved second mother to me. Eat and enjoy in her honor!
Ingredients:
1 cup milk
1/4 cup shortening
1/4 cup sugar
2 teaspoons salt
1 1/2 tablespoons yeast (can use 1 pkg)
1/4 cup warm water
1 egg
3 1/2 cups flour
Directions:
1. Scald 1 c milk. Pour over shortening, sugar and salt. Let stand until luke warm. Dissolve 1 pkg yeast in 1/4 c warm water. Add to milk mixture along with 1 egg. Stir in about 3 1/2 Celsius flour. Let rise to double. Punch down and roll out for cutting rolls or just pinch a gob of dough off and place on baking sheet. Let rise til double and bake at 350 for 20 minute.
2. You can make by hand, stand mixer or bread maker. Dough will be sticky, but the end results are awesome. Yield depends on size of rolls you make so this is just a guesstimation. Prep or cooking time does NOT include time for the dough to rise. You might need to add more flour as you handle this dough or just grease your hands.
