Frosting baked in,travels to schools,picnics,get-togethers.Moist and flavorful.Makes alot of cupcakes.I like to double topping recipe.
Ingredients:
3 cups flour
3 cups sugar
1 cup oil
4 eggs
2 cups,pureed pumpkin
2 tsp.baking soda
1 tsp.cinnamon
1 tsp.nutmeg
1 tsp.ground cloves
1/2 tsp.baking powder
1 cup chopped pecans
2/3 cup water
1 tsp.salt.
8 oz creamcheese,softened
1/3 cup sugar
1 egg
6 oz semi-sweet chocolate chips,regular or mini size
Directions:
1. Preheat oven to 350 degrees.
2. In large bowl beat eggs,add oil,then pumpkin.Mix dry ingredients in medium bowl.Gradually beat into egg/pumpkin mixture.
3. Line cupcake pan with paper liners.Fill half full with batter.
4. In a medium bowl beat cream cheese,egg and sugar together.Drop spoonful,about one tablespoon,onto cupcake batter.Sprinkle with chocolate chips.Bake at 350 for 25-30 minutes.
