No Bake Pink Cherry Cream Cheese Cake

A pink creamy no bake dessert swirled with a hint of chocolate. If you can't find gelatin leaves, one can use 1 envelope unflavored ( 1/4 oz )gelatin to equal 4 leaves of gelatin One may be able to buy red cherry compote or perhaps use a good quality red cherry pie filling instead Source from a German baking group
Ingredients:
125 g butter
150 g ladyfingers
600 g cream cheese softened
300 g plain yogurt
500 g red cherry compote ( cooked down red cherries with sugar )
3 tbs fresh lemon juice
9 gelatine leaves
150 ml water
75 g sugar
100 g milk chocolate , melted
Directions:
1. Prep does not include chill time or cooking of a cherry compote- probably could use a good cherry pie filling
2. Chop ladyfingers finely and mix in the melted butter.
3. Press this into a 26 springform pan .
4. Mix the softened Cream cheese, yogurt and lemon juice together and set aside
5. Soak/soften 3 sheets of gelatin leaves and mix into the red cherry compote and set aside
6. Combine remaining 6 sheets of gelatin softened with the sugar dissolved in the 150 ml of water
7. Then mix this gelatine into the softened cream cheese mixture
8. Take 3 / 4 of this cream cheese mixture and mix into to the red cherry compote mixture and place into the chilled crust
9. Melt chocolate and stir in the remaining 1/4 the cream cheese mixture.
10. . Place chocolate mixture onto the pink layer and swirl with a fork.
11. Chill cake at least 3 hours or more prior to serving
