Nif's Grandpa's Baked Granola

When I was a little girl, my Grandma would make batches of this for my Grandpa. It filled her house with a wonderful aroma and tasted terrific. She would store it in large glass Mason jars when it cooled. This is a half batch of what she used to make and my Sister makes this amount fresh every week. You can eat this as regular granola with milk or sprinkle on yogourt or ice cream. Thanks Grandma! Enjoy!
Ingredients:
8 cups whole oats
2 cups slivered almonds
2 cups wheat germ
2 cups unsweetened coconut, grated
1/2 cup oil (vegetable or canola)
3/4 cup brown sugar
1 tablespoon vanilla
1 cup water (more if needed)
Directions:
1. Mix dry ingredients in a large bowl. Mix wet mixture ingredients together in a medium bowl. Add wet mixture to dry. Mix until small clusters form. If you live in a dry area, you may need to add more water - add 1/4 cup more at a time. Spread very evenly onto 2 cookie sheets.
2. Bake for 30 - 35 minutes at 350°F Bake in 9-10 minute intervals, then mix on the pan. Make sure that it is evenly distributed so corner areas don't burn.
3. You can enjoy some of it warm but cool completely to store in an airtight container.
