Posting so I won't lose it . This is the only Nicoise Pasta salad recipe that I have found that also includes potatoes. I have not seen another quite like this on the web...and believe me, I have searched!! Refreshing, tasty, and good to have around for those lazy days when you don't feel like cooking.
Ingredients:
4 potatoes
1/2 lb green beans, ends trimmed
3 cups rotini pasta
1 large tomato, cut into thin wedges
1 small red onion, thinly sliced
1 cup pitted black olives, halved
1 (7 ounce) can tuna, solid light
2 hard-boiled eggs, cut into 4 wedges each
1/4 cup fresh basil, chopped
1/4 cup red wine vinegar
2 garlic cloves, minced
1 tablespoon dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup extra virgin olive oil
Directions:
1. In pot of boiling salted water, cook potatoes for 20 minutes or until tender.
2. Remove with slotted spoon and cut into 1-inch squares.
3. Cook green beans in same pot for 2-3 minutes, or until tender crisp; drain and rinse under cold water.
4. Meanwhile, cook rotini in large pot of boiling salted water for 8 minutes or until tender but firm; drain and rinse lightly.
5. In large bowl, toss together potatoes, green beans, rotini, tomato, onion, olives and tuna.
6. In small bowl, whisk together basil, vinegar, garlic, mustard, salt and pepper.
7. Slowly whisk in oil.
8. Pour dressing over salad ingredients and toss gently to coat.
9. Serve garnished with wedge of egg.
