This salsa is my future brother-inlaws recipe. There's nothing fancy about this salsa but I just can't seem to stop eating it. When Nick made this salsa he used the fresh lime juice.
Ingredients:
4 large tomatoes, quartered
3 -4 garlic cloves
spanish olive oil
1/2 large onion, cut in chunks
salt, to taste
fresh cilantro, chopped
1/2-1 fresh lime juice (optional)
Directions:
1. Drizzle tomatoes and garlic cloves with spanish olive oil, roast in 400 oven, 30-40 minutes until soft and even a little dark.
2. Put in blender the roasted tomatoes and garlic, onion. Process until chunked.
3. Pour in bowl, add salt to taste, add cilantro, and lime juice and let it sit before deciding to add more salt!
