New Years Chicken Wings

I made these lip-smackin' wings last New Year's Eve and they were a hit! A few strong, sharp flavors combine to make this a memorable appetizer.
Ingredients:
3 lbs chicken wings
1 cup lime juice
3 ginger roots, sliced
1 head garlic, chopped
1 cup olive oil
1 cup water
1 tsp salt
1 tsp black pepper, ground
Directions:
1. Combine all ingredients and marinade the Chicken wings for 30 minutes to 1 hour.
2. Put Chicken wings in an oven pan with enough marinade to cover the bottom of the pan. Put in oven at 375 degrees for 30 minutes.
3. Add more water to the pan and return to the oven. Increase the oven temperature to 425 degrees and bake 15 minutes more.
4. Remove pan and let wings stand for 10 minutes before serving.
5. NOTE: If desired you you may simmer the left over marinade to pour over the cooked wings. BUT make sure you bring the marinade to a BOIL and SIMMER for 10 minutes. It MUST be cooked because it had RAW chicken in it. Otherwise discard the marinade.
