New Wave Spinach Salad

Not your traditional spinach salad. Fruity and yummy.
Ingredients:
dressing
1/4 cup lemon juice
8 t canola oil
2 t honey
1 tsp dijon mustard
2 cloves garlic, peeled and minced
1/2 tsp salt
1 tsp black pepper

3 cups torn spinach leaves, washed and dried
3 cups torn red-leaf lettuce, washed and dried
2 ripe kiwi fruit, peeled and thinly sliced
1 can (11 ounces) mandarin oranges, drained
1/2 cup dried cranberries (dried cherries work well also, as could raisins but as a last resort)
1 cup red onion, thinly sliced
6 ounces soft goat cheese, cut into six 1/2-inch thick rounds

Directions:
1. In a small bowl, whisk together lemon juice, oil, honey, mustard, garlic, salt, and pepper. Set aside.
2. Combine spinach and lettuce in a large bowl.
3. Pour dressing over greens and toss to coat.
4. Divide greens among 6 plates and garnish each with kiwi, mandarin oranges, cranberries, red onion, and a round of goat cheese. Serve with a crusty slice of bread.
5. This salad also is great for a main course at lunchtime.
