New Potatoes with fresh herbs

Ingredients:
2 tablespoon(s) fresh lemon juice
1 1/2 teaspoon(s) dijon mustard
1/2 teaspoon(s) minced garlic
1/2 teaspoon(s) salt
1/3 cup(s) canola oil
3-4 tablespoon(s) fresh herbs (dill, chives, parsley) chopped
ground pepper
2 pound(s) new potatoes cut into pieces
lemon zest
Directions:
1. In a small bowl, combine lemon juice, mustard, garlic, & salt. Gradually whisk in oil. Stir in the herbs. Add pepper to taste and set aside.
2. In a large pot, cover new potatoes with cold, salted water. Bring to a boil, and then reduce heat to low. Simmer for 10-15 minutes or until tender. Drain and toss with dressing. Garnish with lemon zest. Serve warm or cold.
