New Potato and Chive Salad

Ingredients:
1 1/2 lbs new potatoes
4 spring onions
3 tablespoons olive oil
1 tablespoon white wine vinegar
3/4 teaspoon dijon mustard
3/4 cup mayonnaise
3 tablespoons fresh chives, snipped
salt and pepper
Directions:
1. Cook the potatoes in boiling salted water until tender.
2. Meanwhile chop the spring onions.
3. Whisk together the oil, vinegar and mustard.
4. Drain the potatoes well, then immediately toss lightly with the vinegar mixture and spring onions. Leave to cool.
5. Stir the mayonnaise and chives into the potatoes and chill until ready to serve.
