These nutty, maple-rich muffins smell so wonderful while baking! Hopefully, your family will love them as much as mine does!
Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1 1/4 teaspoons baking soda
1/4 teaspoon salt
12 cup ( 1 stick) softened butter
1/4 cup maple syrup
1 1/2 cups dairy sour cream
1 large egg
1/2 cup coarsely chopped pecans or walnuts
Directions:
1. Preheat oven to 400 degrees.
2. Grease 12 muffin pan cups or line with paper baking liners.
3. If using paper baking liners, spray with non-stick cooking spray.
4. In medium mixing bowl, mix together flour, baking powder, baking soda, and salt.
5. *Tip: Measure baking soda and baking powder into palm of your hand and flatten with measuring spoon to remove any lumps.*
6. In large mixing bowl, beat softened butter at medium speed of electric mixer until light and fluffy.
7. Beat in maple syrup slowly.
8. Beat in sour cream and egg until well-blended.
9. At low speed, beat in flour mixture just until dry ingredients are blended. (Do not over-mix.)
10. By hand, stir in coarsely-chopped nuts.
11. Spoon batter into prepared muffin pan, filling 2/3 full.
12. Bake muffins for 15-20 minutes until golden.
13. ***For the best flavor, use pure maple syrup.
