There are many recipes for Cowboy Soup, and just like Tortilla Soup they are all pretty good. We enjoy this one down on the Ranch in Southern New Joisey! Here is one that I recently developed. I hope that you all enjoy it Podnah.
Ingredients:
1 onion chopped up
1 can diced tomatoes with chilis
1 lg can chopped tomatoes or crushed tomatoes
1 can corn
2 cans or two packages of spanish rice.
1 1/2 -2 pounds of ground beef. you can also substitue cut up beef chunks.
8 cups of beef broth or beef bullion in water
1 green pepper chopped
2 yellow summer squash if available
2 tablespoons of worcestershire sauce
handful of chopped celantro, basil and oregano
three cloves garlic chopped fine
1 can red beans, drained
1 can black beans drained
1-2 jalapeneo peppers chopped up fine.
two teaspoons of cumin.
a few dashes of chili powder...don't get too carried away with this stuff, it can get pretty hot
a dash of lime juice to taste.
Directions:
1. Start by putting the ground beef into a stock pot and cooking. Then add rice and slowly add all the other ingredients.
2. Cook for 4-5 hours on low. Add water/beef broth until the soup reaches the consitancy you like as the rice will absorb much of the water.
3. If you like it spicey, then add hot sauce.
4. Serve with tortilla chips and enjoy.
